Peanut Butter and Banana Oatmeal Cookies

Ingredients: 
2 very ripe bananas (Not too ripe, you do not want them runny) 
1⁄3 cup peanut butter (Aim for natural peanut butter without the hydrogenated oils!) 
1⁄2 cup unsweetened applesauce
 1 tablespoon vanilla
 1⁄4 teaspoon salt
 1 teaspoon cinnamon 
1 1⁄2 cups raw oats 
1⁄4 cup shredded coconut

Directions: The first thing you want to do is preheat your oven to 350. Peel bananas and place in a bowl. With a fork, mash bananas and gently mix in peanut butter. Mix in the peanut butter slowly as it has a thick consistency and it will stick to the bowl. Next, mix in apple sauce, cinnamon, salt and vanilla. Once you have your mixture blended well, stir in the coconut and oats. Make sure to
stir in the oats and coconut well as you don’t want dry coconut or oats. Start by using a table spoon to measure out scoops of the mixture and place on a cookie sheet. The cookie sheet needs to be sprayed with a non-stick spray or lined with wax paper. When placing tablespoon scoops onto the cookie sheet, use the back of the spoon to flatten the cookie onto the tray. Set your timer and bake for around 12 minutes. The top of the cookies will be golden brown when finished. Make sure you rotate your cookie sheet at 6 minutes. Once their done, allow the cookies to cook and enjoy!
